Whole foods salad with apple, lime & mint

Summer may be a while away, but we all need a few simple, healthy recipes to get us through the winter months. 

We've created a fresh, zingy salad using some of our favourite whole foods below, which we think you'll love. Give it a go, and let us know what you think! 
 

40g toasted pine nuts
150g diced & de-seeded cucumber
2 de-seeded tomatoes

Approx 100g sliced radishes
1 small green apple, cored and diced
10g fresh chopped mint
Juice of half a lime
1 birds eye chilli (optional - depends how spicy you like your food!)

Mix all ingredients together in a bowl, season with salt and pepper and dress with your favourite olive oil. 

Serves one as a main, or two as a side salad.
